Layer Cake Fraisier. Place the sugar, eggs and lemon zest in a large bowl set over a pan. Place bowl over a saucepan of simmering water.
Put the eggs and sugar in a clean bowl.
Cool slightly then carefully pour the hot syrup with the berries into a blender and puree smooth, reserve until later.
Chill the bowl of whipped cream. Pour into the large bowl of batter and stir until incorporated.
